Mention tiger-print upholstery, disco-ball decor and a whirling negroni cart, and you can only mean one spot, Nancy's. While leaning aesthetically into a bygone era of 70s excess, the cocktail programme at Nancy's couldn't be more present, using ingredients and influence from the stalls of nearby Borough Market.

Nancy's sits right at the top of Colechurch House, but step beneath the glowing neon sign and you're transported into a glamorous 1970s time capsule where the interiors couldn't feel further removed from the stark brutalist shell that surrounds them. Panoramic views of the city, slouchy leather sofas, tiger-print motifs and plenty of disco-ball magic define the space, which is made for mingling, lingering and dancing by the DJ booth. 

The cocktail list revolves around a clever “market-to-glass” philosophy, making the most of nearby Borough Market's incredible produce. An excellent example is the signature filthy martini, made with olives from Borough Olives and their intensely savoury brine, rescuing what would otherwise go to waste. It's silky, salty and unapologetically filthy; it's the stuff of dirty-martini-lovers' dreams. Throughout the menu, surplus ingredients and market finds are transformed into slick serves that feel hyper-local and instinctive rather than gimmicky.

Unsure what to order or where to start? Nancy's makes things easy. The servers will likely recommend you start with one of the “Small Sips”, their half-size cocktails, perfect for an aperitif or a final nightcap. Alternatively, you can leave your fate to the roaming negroni trolley. Roll the dice and your negroni serve is chosen for you. It's one of the most entertaining ways to order a cocktail in London.
