Launched by the former head chef of Kiln, one of London's top Thai restaurants, Pam in Farringdon uses seasonal British produce to bring the bold flavours of Thai cuisine to the table, while still leaving plenty of room for the creative chef to play in. The resulting blend is rooted in Thai tradition, but puts its own spin on things, informed by London culture and contemporary trends.
