Glaswegian chef Nico Simeone’s Six by Nico restaurants are based around a simple concept – a changing six-course tasting menu that revolves around a theme and is served at a fixed, affordable price despite its fine dining characteristics. The well-executed menus range from self-explanatory focuses on, say, Greek or Thai food, to more abstract ideas such as “guilty pleasures” or “Alice in Wonderland”. They change every six weeks, with the restaurant setting changing along with them for a more immersive experience.
