In a time where sustainability and environmentalism have firmly gone from niche interest to mainstream trend, this Mayfair eatery applies the eco-conscious approach not just to its dishes but its space as a whole.

Chef Chantelle Nicholson is a well-known low-waste advocate, so it's quite fitting that her restaurant follows those same principles. Lampshades made out of up-cycled coffee grounds and orange peel, the previous staircase refashioned into a feature wall that catches the eye with its irregularity, it all breathes naturally and reinforces the core tenets of sustainability, responsibility, regeneration and hospitality. The Michelin Guide recognised the restaurant's environmental commitment in 2023, awarding it a green star.

Championing British produce – highlighted especially by the tasting menu – Apricity prides itself on being a low-waste operation, which extends to the drinks as well. There's an extensive list of low intervention wines and innovative zero-waste cocktails to go with the à la carte menu, which emphasises vegetables with dishes such as Isle of Wight aubergine with zhoug and roasted almond butter, miso-cured spring cabbage with smoked hemp cream and black garlic ketchup, or London red butterhead lettuce salad. The meat and seafood dishes, for example Devon pork belly or Newlyn cuttlefish, all come with plenty of veggies as well, while the dessert menu features intriguing choices such as a nettle and rapeseed cake.
