Hyllad izakaya mitt i Stockholm city

Shibumi på Malmskillnadsgatan är en uppdaterad version av krogens föregångare, som huserade på Kungstensgatan. Även här hyllar man det japanska izakaya-köket, men med en nyskapande twist. Maten ackompanjeras av iskall öl, vin och sake som valts ut av restaurangens sommelier.

Klingar namnet Shibumi bekant? Krogen, som drivs av stjärnkocken Sayan Isaksson, hittades mellan 2015 och 2018 i en annan del av stan, och återuppstod hösten 2025 mitt i Stockholm city. Den nya lokalen präglas av mörkt trä, en stor japansk väggmålning och fönster som sträcker sig från golv till tak. Här finns plats för 60 gäster att äta middag eller bara ta ett glas och lite snacks, i en atmosfär som passar för såväl en mysig dejt som en avslappnad afterwork. Platserna vid bardisken har fri sikt in i det öppna köket, och du kan även ta del av kockarnas arbete vid sashimi-stationen. I ett av restaurangens hörn finns en LP-spelare med tillhörande plattor som låter gästerna välja musik. 

Både varma och kalla rätter hittas på menyn, som listar såväl kött och fisk som ett par vegetariska alternativ. Merparten serveras i liten eller mellanstor storlek, något som gör att Shibumi lämpar sig särskilt bra för en sharingmiddag – eller om man bara vill ha något litet att tugga på medan man sippar på ett glas. I köket möts traditionella japanska tekniker och ingredienser med en nytänkande anda, vilket resulterar i innovativa rätter som ska ge gästen en ny och kanske lite oväntad smakupplevelse. Dryckesmässigt satsar man på riktigt kall öl, vin från såväl Japan som mer traditionella vinländer och ett brett utbud av sake som valts ut av restaurangens sake-sommelier.

I used to enjoy the old Shibumi on Kungstensgatan so I got curious about trying this new edition. Then I got worried based on a few mixed reviews. I ended up positively surprised. I wish I could give the place a 4.5 stars as both the service and the food were delicious. We ordered a lot of dishes to share and were disappointed by none. Each serving was something new and intriguing. Not much in common with the old Shibumi but yummy. Perhaps a little less refined. Some of the dishes were on the small side (tofu where are you?) but others were good portions, completely shareable. The desserts sounded unappealing but again we were positively surprised.

So why not 5 stars? I think the atmosphere could still improve a bit. In the other reviews I heard it was really loud. That was definitely not the case when we were there (a Thursday evening); there was some music but we could hear each other well. On the contrary, it felt a little empty and a little messy. The toilet has beer kegs in it and we sat next to something that looks like a glass-walled wine cellar but it also serves as a storage room. I was also irritated by the lack of napkins. I get the ambition to create an “authentic” isakaya feel. But at this price point, I think I’m entitled to having a proper cloth napkin. Also, small detail, but they didn’t have any proper sparkling water. Only “Vichy” which is quite salty. What’s wrong with regular (free!) bubblevatten?

So all in all: good food, great service. 4 stars well earned. If I get a proper napkin, some nice regular sparkling water and the atmosphere perks up a tad, it will be a 5. I’ll be back to check soon.

Vi hade bord bokat en lördag kväll. Tidig sittning, var vi några sällskap till i hela lokalen. Gjorde att atmosfären kändes ganska stel och tråkig tyvärr. Servicen kändes genuin och trevlig utan att bli för intensiv. Vi beställde 6 rätter...

Hade höga (!) förväntningar som tyvärr slutade i total besvikelse. Det som en gång var en av Stockholms bästa restauranger har efter "nyöppningen" blivit något HELT annat. Maten saknar känsla och finess. Konstiga och ogenomtänkta smakkomb...
